Still, good enough, and hotter than Leo

Traveling from the South disqualified me from any major cooking duties at home for Christmas, except for a biscuit request from my brother.

They’re more tempting than vampires and easier to slather with honey.

Southern Biscuits
Note: Do not overwork the dough. Handle with care so the biscuits will be light. For the biscuits to rise properly do not twist the cutter when pressing out the circles, use a biscuit cutter if you have one, and place them close to each other in the pan.

Ingredients
2 c. all-purpose flour
4 t. baking powder
1/4 t. baking soda
3/4 t. salt
2 T. unsalted butter
2 T. shortening
1 c. buttermilk

Directions
Preheat the oven to 450 degrees.

In a mixing bowl combine all of the dry ingredients together. Cut in the butter and shortening with a pastry cutter (or two knives) until the dough bits resemble small peas. Make a well in the mixture and pour in the buttermilk. Carefully stir until the dough comes together.

Turn the dough on to a floured surface and form into a mound. Fold it over 3-4 times but be gentle. Pat the dough into a round shape, 1″ thick. Cut biscuits out with a biscuit cutter (or round glass) by pressing straight down (do not rotate cutter!).

Place the biscuits in a round cake pan so they touch. Bake for 15-20 minutes or until light golden brown.
