I really want to love Fusion but can’t jump on the band wagon quite yet.
For the most part, there is a severe lack of ethnic restaurants in Jackson, having only one (or two) options in each category to satisfy our cravings. Don’t even think about Korean food. I’ll be holding my breath for bulgogi until Roseanne Barr is president.
So, when I heard a murmur that a new Thai/Japanese place had opened it’s doors, I was ready to eat.
Braving Lakeland drive, I met a friend for lunch at Fusion which is tucked behind an Applebee’s. We walked into a jam packed dining room being taken care of by two waitresses, also acting as hostesses and cashiers. Needless to say, we waited for a long time at each interval of our meal. (About two hours total.)
My fellow foodie friend and I decided to split two entrees off the Thai Lunch Special menu, L-09. Pad Thai (the litmus test) and L-06 Ginger Delight with pork.
The portions were generous and the ingredients fresh, but the flavors were strange. The Pad Thai had an orange tinge and was unusually sweet, my friend thinks too much tamarind was the culprit. The Ginger Delight was better but lackluster, nothing I haven’t cooked at home. The Spring rolls were good (for spring rolls) and we received a bowl of soup at the end of our meal.
Fusion is still new, naturally they have kinks to work out and could benefit from hiring more employees. It’s clearly a popular destination for the lunch crowd and also have a reasonable Japanese hibachi menu. I look forward to going back and sincerely hope it was a one time fluke.
The lunch menu is served from 11 a.m.-3 p.m. and the Thai entrees come with your choice of chicken, beef, pork, tofu, vegetables, shrimp, combination or seafood combination ranging from $7.95 – $10.95. It is served with soup or a spring roll and rice.

I’ve been 4 times already- all for dinner. Both the Larb Chicken and the Nam Tok on the salad menu are outstanding- *especially* the Nam Tok. The Panang Catfish is very good, the lamb is very good, the basil duck is excellent, and the three flavor red snapper is hands down one of the best fish dishes I’ve ever put in my mouth. Their spiciness is a bit irregular, but I’ve taken to ordering everything Thai hot, which is nice and spicy, but not too hot to enjoy.
I recently had the Lama Five with beef, which was also pretty good. And the seafood delight (seafood combo- I forget the name), which was surprisingly bland. But I cannot stress enough about the snapper. It’s fan-freaking-tastic.
I had the hibachi chicken once, because they got my take-out order wrong (and still charged me for the more-expensive item that I didn’t order, which I found kind of annoying), and it was relatively forgettable. The Thai Food is where it’s at.

I have high hopes for the Thai dishes and will have to go again soon. Thanks for the suggestions because I will definitely keep them in mind.
